Others say it is just as easy as ABC. And really? It is. Carrots, potatoes, corn, onion, tomato, chicken, and water. Everything goes in together. The rice cooker does the rest. Wholesome, comforting, and genuinely good for the whole family, kids included.

Ingredients

  • 2 chicken legs
  • 2 carrots, cut into chunks
  • 2 to 3 potatoes, cut into chunks
  • 1 corn, cut into sections
  • 1 onion, quartered
  • 1 tomato, quartered
  • 800ml water

Method

  1. Cut the carrots and potatoes into chunks. Cut the corn into sections. Quarter the onion and tomato.
  2. Add the chicken legs, carrots, potatoes, corn, onion, and tomato into the rice cooker pot.
  3. Pour in 800ml water.
  4. Close the lid and cook on Soup mode. That is it. Walk away and let the rice cooker do everything. 🍲
No seasoning needed during cooking. The chicken, tomato, and vegetables release enough natural flavour into the broth as they cook. Taste the soup once it is done and add a little salt only if needed. You will probably find it does not need much at all.
This soup is great for kids. The broth is naturally sweet from the corn and carrots, light and easy to digest, and completely free from any heavy seasoning. It is one of the most gentle, nourishing meals you can make for the whole family.

Cut everything into similar sized pieces. Even chunks mean everything cooks at the same rate. If the potatoes are huge and the carrots are tiny, one will be overcooked and the other underdone by the time the soup mode finishes.
