The recipe
Chinese Winter Melon Soup
Six ingredients. Soup mode. Done.
Ingredients
- 350g spare pork ribs, blanched
- 500g winter melon, peeled and cubed
- 1.5 tbsp goji berries
- 3 to 4 red dates
- 4 dried scallops
- 500ml water
- Chicken can be used instead of pork ribs
Method
- Blanch the spare ribs in boiling water for 3 to 5 minutes to remove impurities. Drain and rinse under cold water.
- Peel and cube the winter melon into large, even chunks.
- Add the blanched ribs, winter melon, goji berries, red dates, dried scallops, and 500ml water into the rice cooker pot.
- Close the lid and cook on Soup mode. Let the rice cooker do its thing. 🍲

Chicken works just as well. If you prefer a lighter soup or do not eat pork, swap the spare ribs for chicken legs or chicken pieces. The method is exactly the same. Blanch first, then everything into the pot. The broth will be slightly lighter but just as flavourful.

Do not skip the dried scallops. They are small and easy to overlook but they are the ingredient that gives the broth its natural sweetness and umami depth. Even 4 pieces dissolve slowly and transform a simple vegetable soup into something that tastes properly nourishing.

Taste before adding salt. The dried scallops, red dates, and goji berries all contribute natural saltiness and sweetness. Once the soup is done, taste it first. It may be perfectly seasoned already. Add a small amount of salt only if needed.
