The recipe
Lotus Root Soup

Ingredients
- The soup
- 250g pork ribs, blanched
- 300g lotus root, cleaned, peeled and sliced
- 1 carrot, cut into chunks
- 4 dried scallops
- 4 red dates
- 80g peanuts, soaked for 30 minutes
- Water to cover
Method
- Soak the peanuts in water for 30 minutes before you start. Drain and set aside.
- Blanch the pork ribs in boiling water for 3 to 5 minutes to remove impurities. Drain and rinse under cold water.
- Peel and slice the lotus root into rounds. Cut the carrot into chunks.
- Add the blanched pork ribs, lotus root, carrot, soaked peanuts, dried scallops, and red dates into the rice cooker pot.
- Fill with water until everything is fully submerged. Close the lid.
- Cook on Soup mode. Let the rice cooker do all the work. 🍲

Tip 01
Slice the lotus root evenly. Thick slices take longer to soften and stay slightly crunchy. Thin slices go completely soft and melt into the broth. Aim for rounds about 1cm thick for the best balance of texture and flavour absorption.
Tip 02
The dried scallops are the secret weapon. Do not be tempted to leave them out. They dissolve slowly into the broth and add an umami depth that you cannot replicate with anything else. Even 4 pieces make a significant difference to the final flavour.
Tip 03
No salt needed until the end. The dried scallops, red dates, and peanuts all contribute natural saltiness and sweetness to the broth. Taste it once it is done before adding any salt. It may not need any at all.
Tip 04
This soup gets better the next day. Like all slow-cooked soups, the flavours deepen overnight. If you have leftovers, reheat gently and the broth will taste even richer. Make a bigger batch if you can.
