Ingredients

  • The noodles
  • Soba noodles (1 bundle per person)
  • Salmon sashimi slices (as much as you want)
  • 1 medium carrot, thinly sliced
  • 1 cucumber, thinly sliced
  • Lemon slices
  • Ice for ice bath and serving
  • The dashi sauce
  • 300ml dashi stock
  • 1 tbsp soy sauce
  • 1 tsp mirin

Method

  1. Mix together 300ml dashi stock, 1 tbsp soy sauce, and 1 tsp mirin. Put the sauce in the fridge to chill while you prep everything else.
  2. Cook soba noodles for 4 minutes. Drain immediately and transfer straight into an ice bath. This stops the cooking and keeps them cold, firm, and chewy.
  3. Thinly slice the carrot, cucumber, and lemon while the noodles chill.
  4. Add the cold soba and ice into a serving bowl. Pour the chilled dashi sauce over.
