The recipe
Avocado Carbonara

Ingredients
- 1 ripe avocado
- Spaghetti (enough for 2-3)
- 2 egg yolks
- 3 tbsp parmesan cheese
- Drizzle of olive oil
- 3 turkey bacon strips
Method
- Mash together the avocado, egg yolks, parmesan, and olive oil until smooth and creamy. This is your sauce.
- Boil spaghetti for 11 minutes until al dente. Salt your water. It matters.
- Air fry turkey bacon at 180°C for 5 minutes. No oil needed. You want it properly crispy.
- Drain the pasta and toss directly into the avocado sauce while still hot. Mix well to coat every strand.
- Top with crispy turkey bacon bits and serve immediately. 🥑

Tip 01
Ripe avocado only. A hard avocado won't mash into a smooth sauce, so you'll end up with lumps in your pasta. Press the top gently before you start. It should give slightly. If it doesn't, give it another day.

Save the egg whites. You only need the yolks here for richness. Pop the whites in a small container and refrigerate them for a quick egg white omelette the next morning. Nothing goes to waste.
Tip 03
Air fry the bacon. 180°C for 5 minutes gives you even, crispy turkey bacon with zero oil. Pan frying works too, but the air fryer is consistently better and genuinely easier to clean up.

Eat it straight away. Avocado oxidises quickly once mashed. The colour and texture are best immediately after tossing. This is not a meal prep dish. Scoop, top, eat.
