The sweet soy and dashi broth, the soft onions, the tender beef that barely needs cooking, and that onsen egg broken over the top that makes everything come together. Everything cooks in one pot, there is minimal prep, almost no washing up, and the whole thing is ready in 15 to 20 minutes. Basically the perfect lazy-day comfort meal.

The recipe
Sukiya-Inspired Beef Yaki Udon
One pot. Gyudon flavours. Onsen egg on top.
Ingredients
- The udon
- 2 packs fresh udon
- 150 to 200g beef shabu-shabu, thinly sliced
- 1 onion, sliced
- The sauce
- 100ml dashi
- 3 tbsp soy sauce
- 2 tbsp mirin
- ½ to 1 tbsp sugar
- To serve
- 1 onsen egg per serving
- Spring onions, optional
Method
- Add the dashi, soy sauce, mirin, and sugar directly into the rice cooker pot. Give it a quick mix.
- Add the sliced onion and fresh udon. Close the lid and cook on White Rice mode for 10 to 15 minutes until the onions are soft and the udon is heated through.
- Once the onions have softened, lay the beef slices on top. Close the lid and cook for 1 to 2 minutes only, until just done. Do not overcook the beef.
- Open the lid and toss everything together so the udon is coated in the sauce.
- Transfer to a bowl. Top with an onsen egg, break the yolk over the noodles, and garnish with spring onions. 🍳
Tips

Tip 01
Use fresh udon, not dried. Fresh udon is already soft and just needs to be heated through with the sauce. Dried udon needs to be boiled separately first, which defeats the one-pot point entirely. Fresh packs from the chilled section are what you want here.
Tip 02
Adjust the sugar to your taste. Half a tablespoon gives you a savoury forward bowl closer to a traditional yaki udon. One tablespoon brings it toward the sweeter gyudon flavour that Sukiya is known for. Taste the sauce before the udon goes in and decide which side you prefer.
Tip 03
How to make the onsen egg. Bring 1 litre of water to a boil, then take it off the heat and add 200ml of room temperature water. Submerge your eggs straight from the fridge and leave for 13 to 14 minutes. The result is a barely set white and a warm, jammy yolk that is the whole point of the topping.
Tip 04
Break the yolk as soon as the bowl hits the table. The onsen egg yolk is the sauce. Let it run into the noodles and mix it through immediately while everything is still hot. It thickens the sauce, adds richness, and makes the whole bowl taste like it took much more effort than it did.
