The recipe
Healthy Garlic Fried Rice
Less oil. Full flavour. Literally dump and go.
Ingredients
- The chicken marinade
- 2 chicken thighs, chopped into cubes
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp agave
- The fried rice
- 1 cup rice, washed
- 8 cloves garlic, minced
- 2 eggs
- A little olive oil
- Sprinkle of spring onions
- To season
- Soy sauce to taste
- Sesame oil to taste
- White pepper to taste
Method
- Marinate the chicken cubes in soy sauce, oyster sauce, and agave. Set aside while you wash the rice.
- Add the washed rice and marinated chicken into the rice cooker. Cook on white rice mode.
- Once done, shift the cooked rice and chicken to one side of the pot. Add a little olive oil and the minced garlic to the other side. Close the lid and leave for 3 minutes to let the garlic fry and turn fragrant.
- Open the lid and mix the garlic through the rice.
- Shift everything to one side again. Crack in the eggs and fry lightly, then mix everything together until the egg is just cooked through.
- Season with soy sauce, sesame oil, and white pepper. Top with spring onions and serve immediately. 🧄

Tip 01
Do not skip the marinade time. Even 10 minutes makes a difference to how flavourful the chicken is. 30 minutes is better. The soy, oyster sauce, and agave need time to penetrate the cubes. Season as the first thing you do before anything else.
Tip 02
8 cloves of garlic sounds like a lot. It is not. Garlic fried rice earns its name. A timid amount of garlic disappears into the rice. You want to be able to taste it in every spoonful. Use all 8, mince it finely, and do not hold back.
Tip 03
Do not fully scramble the eggs before mixing. Add them to the side of the pot and let them set slightly before folding through. Fully scrambled eggs mixed into rice turn rubbery. Partially set eggs that get folded through coat the rice and create that silky fried rice texture.
Tip 04
Season at the very end, not before. The marinade already has soy and oyster sauce in it and the rice has absorbed some of that during cooking. Taste first before adding more soy. It is much easier to add seasoning than to fix something that is too salty.
