The recipe
Claypot Chicken Rice
Mum's recipe. Rice cooker. Crispy bottom included.
Ingredients
- The marinade
- 1.5 tsp sugar
- 2 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1.5 tsp oyster sauce
- 1 tsp sesame oil
- The rice
- 1.5 cups rice, washed
- 1 lap cheong, sliced
- The toppings
- 3 chicken thighs, deboned and sliced
- Handful of dried shiitake mushrooms, soaked
Method
- Marinate the sliced chicken thigh in the marinade ingredients for at least 30 minutes. The longer the better.
- Soak the dried shiitake mushrooms in water until softened. Drain and squeeze out excess water.
- Wash the rice and add it to the rice cooker. Mix in the sliced lap cheong directly into the rice.
- Layer the marinated chicken and all the marinade liquid over the rice. Add the soaked mushrooms on top.
- Cook on white rice mode.
- Once done, leave on warm mode for 7 minutes for a light char at the bottom. For extra crispy rice, press the rice against the sides of the pot and switch to soup mode for another 7 minutes. 🔥
Tips
"What's claypot rice without the crispy bottom?"
Tip 01
Marinate for longer if you can. 30 minutes is the minimum. If you have time, marinate the chicken in the morning and cook it that evening. The flavour goes so much deeper and the chicken stays juicier throughout the cook.
Tip 02
Squeeze the mushrooms after soaking. After the shiitake rehydrates, give it a good squeeze before adding it to the pot. This stops excess water from diluting the marinade and keeps the rice at the right texture rather than turning soggy.
Tip 03
The crispy bottom is not optional. Warm mode for 7 minutes gives you a gentle char. Soup mode for another 7 gives you the full crispy socarrat effect. Do not lift the lid while it is crisping. Every time you open it, you release the heat and lose the crunch.
Tip 04
Press the rice against the sides for more crunch. Before switching to soup mode, use a spatula to press the cooked rice firmly against the sides and bottom of the pot. More surface contact means more crispy area. This is the move for maximum crunch lovers.
