Garlic Fried Rice (Rice Cooker Hack)

Garlic Fried Rice (Rice Cooker Hack)

Garlic Fried Rice (Rice Cooker Hack)

Day 2 of lazy rice cooker hacks. The easiest garlic fried rice without adding too much oil. If you do not have time, do this 🧄🍚

Why every ingredient earns its place

Fried rice usually means a lot of oil and a very hot wok. This version skips both. The rice and marinated chicken cook together first, then garlic goes in with just a little olive oil, the lid closes, and the steam does the frying for you. It tastes like proper garlic fried rice without the greasy aftermath. Literally dumping everything and making it work.

🧄 Garlic: 8 cloves which sounds like a lot and is exactly right. Anti-inflammatory, supports cardiovascular health, and brings the deep toasty aroma that makes this taste like it was made in a proper kitchen not a rice cooker
🍗 Chicken thigh: chopped into cubes and marinated so every piece is flavoured all the way through. Higher in flavour and moisture than breast, which means it stays juicy even after cooking in the rice
🥚 Eggs: added at the end and fried lightly before being mixed through. They coat the rice and add richness and protein without needing any extra fat or oil
🫒 Olive oil: just a small amount for frying the garlic. Heart-healthy monounsaturated fats and it carries the garlic fragrance through every grain of rice. Less oil, full flavour
🌿 Agave in the marinade: lower glycaemic index than sugar or honey. It balances the saltiness of the soy and oyster sauce without spiking blood sugar

Quick, satisfying, and genuinely less oily than regular fried rice. The kind of meal that comes together when you have no time and still want something proper.

This recipe is for you if

  • You want fried rice without the greasy wok situation
  • You have no time and need something proper for dinner
  • You have a rice cooker and 10 minutes of prep

Less relevant if

  • You do not have a rice cooker
  • You are avoiding soy or eggs
  • You want something ready in under 20 minutes

The recipe

🧄

Healthy Garlic Fried Rice

Less oil. Full flavour. Literally dump and go.

Prep10 min
CookWhite rice mode
Garlic fry3 min
Serves2-3

Ingredients

  • The chicken marinade
  • 2 chicken thighs, chopped into cubes
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp agave
  • The fried rice
  • 1 cup rice, washed
  • 8 cloves garlic, minced
  • 2 eggs
  • A little olive oil
  • Sprinkle of spring onions
  • To season
  • Soy sauce to taste
  • Sesame oil to taste
  • White pepper to taste

Method

  1. Marinate the chicken cubes in soy sauce, oyster sauce, and agave. Set aside while you wash the rice.
  2. Add the washed rice and marinated chicken into the rice cooker. Cook on white rice mode.
  3. Once done, shift the cooked rice and chicken to one side of the pot. Add a little olive oil and the minced garlic to the other side. Close the lid and leave for 3 minutes to let the garlic fry and turn fragrant.
  4. Open the lid and mix the garlic through the rice.
  5. Shift everything to one side again. Crack in the eggs and fry lightly, then mix everything together until the egg is just cooked through.
  6. Season with soy sauce, sesame oil, and white pepper. Top with spring onions and serve immediately. 🧄
Close the lid when frying the garlic. This is the whole trick. The residual heat from the rice cooker plus the closed lid creates enough steam to properly fry the garlic without needing high heat or more oil. 3 minutes with the lid closed and it comes out golden and fragrant every time.
Use the rice cooker pot itself for the whole thing. No extra pan, no extra wash up. The rice cooks, then you fry the garlic in the same pot, then the egg in the same pot. One thing to clean. That is the whole point of this hack.

Tips

"No wok. No extra pan. Less oil. Still tastes like proper fried rice."

Tip 01

Do not skip the marinade time. Even 10 minutes makes a difference to how flavourful the chicken is. 30 minutes is better. The soy, oyster sauce, and agave need time to penetrate the cubes. Season as the first thing you do before anything else.

Tip 02

8 cloves of garlic sounds like a lot. It is not. Garlic fried rice earns its name. A timid amount of garlic disappears into the rice. You want to be able to taste it in every spoonful. Use all 8, mince it finely, and do not hold back.

Tip 03

Do not fully scramble the eggs before mixing. Add them to the side of the pot and let them set slightly before folding through. Fully scrambled eggs mixed into rice turn rubbery. Partially set eggs that get folded through coat the rice and create that silky fried rice texture.

Tip 04

Season at the very end, not before. The marinade already has soy and oyster sauce in it and the rice has absorbed some of that during cooking. Taste first before adding more soy. It is much easier to add seasoning than to fix something that is too salty.

  • Once done, push rice aside, add olive oil and garlic, close the lid for 3 minutes. That is the garlic frying trick.
  • Mix garlic through, push to one side, add eggs, fry lightly and mix everything together.
  • Season at the very end. Taste first. Top with spring onions and eat immediately. 🧄
