Okay, I am busy, I am stressed, I am tired. So here is Day 2 of lazy one pot recipes. Beef Pepper Lunch, rice cooker edition. 🍚🔥

 

 

Why every ingredient earns its place

The salmon version got so much love, so here is the beef one. Same idea. Everything into one pot, cook on rice mode, walk away. The result genuinely tastes almost exactly like Pepper Lunch. Garlic soy butter rice, beef shabu shabu layered on top, crispy rice at the bottom. No separate pan, no standing over the stove, no mess.

And every ingredient is actually doing something for your body.

The recipe

Lazy Beef Pepper Lunch

Ingredients

  • The rice base
  • 1 cup Japanese rice
  • 1 cup water
  • 1 tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tbsp butter
  • Drizzle of agave
  • 1 onion, sliced
  • 1 corn, kernels removed
  • Lots of black pepper
  • On top
  • Beef shabu shabu slices
  • Spring onions to garnish
  • Pepper Lunch Soy Garlic Sauce
  • 1 tbsp soy sauce
  • 1 tsp minced or grated garlic
  • ½ tsp agave or honey
  • 1 tbsp butter

Method

  1. Add rice, water, soy sauce, minced garlic, butter, agave, sliced onions, corn, and lots of black pepper into the rice cooker pot. Mix it all together.
  2. Cook on white rice mode. While it cooks, mix your Lemon Kombucha.
  3. Once the rice is done, layer the beef shabu shabu slices on top in an even layer.
  4. Drizzle over the garlic soy sauce generously.
  5. Switch to soup mode for 8 minutes to cook the beef and crisp up the bottom layer of rice.
  6. Mix everything together, top with spring onions, and serve immediately. 🔥
Soup mode is the whole trick. That final 8 minutes on soup mode is what gives you the crispy rice at the bottom. It is the Pepper Lunch moment. Do not skip it and do not lift the lid early.
🧄🧈 Pepper Lunch Soy Garlic Sauce dupe. Everything into a small bowl. 1 tbsp soy sauce, 1 tsp minced garlic, ½ tsp agave or honey, 1 tbsp butter. Toss it in the microwave for 10 seconds, give it a good mix, and that is literally it. Let us know how it turns out!

"What is Pepper Lunch without the crispy rice? Nothing. Do not skip soup mode."

Tip 01

Layer the beef flat, do not pile it. Beef shabu shabu is very thin. Spread it in an even layer over the rice so every slice gets direct heat and cooks evenly in those 8 minutes. Piling it up means the middle stays raw.

Tip 02

For an extra crispy bottom. The heat building up inside is what crisps the rice at the bottom. Every time you open the lid you release the heat and lose the crunch. Set the timer, walk away, resist.

Tip 03

Lots of black pepper. This is Pepper Lunch. The pepper is not optional and it is not a garnish. It goes in at the start and builds into every grain of rice. Be generous, it is the whole point of the dish.

Something we have while this cooks

The rice takes care of itself while it cooks. That window is the perfect moment to do something good for your metabolism. Not after the meal when you are already full and settled. During, when your body is warming up and getting ready to digest.

One scoop of Lemon Kombucha Blend into cold water while the rice mode runs. It is light, it is refreshing, and by the time the bowl is in front of you your digestion is already primed. It genuinely changes how you feel after a rice meal.
