Chinese Winter Melon Soup

Chinese Winter Melon Soup

Chinese Winter Melon Soup
(Rice Cooker Hack)

You have had winter melon drink. But have you actually tried winter melon soup? 🍲 Six ingredients, a little prep, and the rice cooker does the rest.

Why every ingredient earns its place

Winter melon is one of those ingredients that does not get enough attention. Most people know it from the drink, the sweet sticky version you get at the hawker. But as a soup ingredient, it is completely different. Naturally light and hydrating, it absorbs the broth and becomes silky soft while keeping the whole soup feeling clean rather than heavy. It is the kind of bowl that genuinely nourishes without making you feel stuffed after.

🍈 Winter melon: over 96 percent water, naturally low in calories, and rich in vitamin C and B vitamins. Traditionally used in Chinese medicine to clear heat, support kidney function, and aid digestion. It keeps the soup light and hydrating
🥩 Spare ribs: collagen-rich and full of flavour. The blanching step removes impurities first so the broth stays clean and clear, then the ribs slowly release their goodness into the soup as it cooks
🔴 Goji berries: packed with antioxidants, zeaxanthin, and beta-carotene, traditionally used to support eye health and immunity. They add a subtle sweetness to the broth and turn the soup a beautiful golden colour
🍎 Red dates: naturally sweet and warming, rich in vitamin C and iron. They support blood circulation and add a gentle depth to the broth that makes the whole soup taste more nourishing
🌊 Dried scallops: the umami backbone of the soup. They dissolve slowly into the broth and add a natural sweetness and depth that makes this taste far more complex than six ingredients should

Light, hydrating, and genuinely easy. An easy, nourishing soup without all the fuss.

This recipe is for you if

  • You want a light, nourishing soup without a heavy broth
  • You love Chinese herbal soups but want a simpler method
  • You have a rice cooker and 10 minutes of prep

Less relevant if

  • You do not have a rice cooker with soup mode
  • You are avoiding pork or shellfish
  • You want something ready in under 30 minutes

The recipe

🍈

Chinese Winter Melon Soup

Six ingredients. Soup mode. Done.

Serves2-3

Ingredients

  • 350g spare pork ribs, blanched
  • 500g winter melon, peeled and cubed
  • 1.5 tbsp goji berries
  • 3 to 4 red dates
  • 4 dried scallops
  • 500ml water
  • Chicken can be used instead of pork ribs

Method

  1. Blanch the spare ribs in boiling water for 3 to 5 minutes to remove impurities. Drain and rinse under cold water.
  2. Peel and cube the winter melon into large, even chunks.
  3. Add the blanched ribs, winter melon, goji berries, red dates, dried scallops, and 500ml water into the rice cooker pot.
  4. Close the lid and cook on Soup mode. Let the rice cooker do its thing. 🍲
Blanch the ribs first, always. This step removes the blood and impurities that would cloud the broth and give it a gamey smell. It takes 5 minutes and makes the difference between a murky, heavy soup and a clean, clear, properly flavoured one. Do not skip it.
Cut the winter melon into large chunks. Winter melon softens significantly during the long cook. If the pieces are too small they will completely disintegrate into the broth. Large chunks hold their shape and give you that silky, tender texture when you eat.

Tips

"Naturally light and hydrating. An easy, nourishing soup without all the fuss."

Tip 01

Chicken works just as well. If you prefer a lighter soup or do not eat pork, swap the spare ribs for chicken legs or chicken pieces. The method is exactly the same. Blanch first, then everything into the pot. The broth will be slightly lighter but just as flavourful.

Tip 02

Do not skip the dried scallops. They are small and easy to overlook but they are the ingredient that gives the broth its natural sweetness and umami depth. Even 4 pieces dissolve slowly and transform a simple vegetable soup into something that tastes properly nourishing.

Tip 03

Taste before adding salt. The dried scallops, red dates, and goji berries all contribute natural saltiness and sweetness. Once the soup is done, taste it first. It may be perfectly seasoned already. Add a small amount of salt only if needed.

Tip 04

This soup is especially good when you feel run down. Winter melon is traditionally used in Chinese medicine to clear internal heat and support hydration. If you are feeling tired, sluggish, or have been working long hours, this is the soup your body is asking for.

Something we have while this cooks

While the soup is doing its thing in the rice cooker, that is the window. We have been reaching for Eye Essential Lemon Bursties lately, especially on long screen days. The goji berries in this soup already support eye health naturally, and pairing it with Eye Essential Bursties takes that support even further. A nourishing bowl and a boost for tired eyes 🍋

One burstlet, pop it, done 🍋

Quick summary

  • Blanch the spare ribs first. This keeps the broth clean and clear. Do not skip it.
  • Peel and cube the winter melon into large chunks so they hold their shape during the long cook.
  • Everything into the rice cooker together. Ribs, winter melon, goji berries, red dates, dried scallops, and 500ml water.
  • Soup mode. Close the lid. Walk away.
  • Taste before adding salt. The dried scallops and red dates may season it perfectly on their own. 🍲
