Herbal Chicken Soup

Grandma's recipe. The easy way.

Ingredients

  • The chicken
  • 1 Whole chicken, chopped
  • The herbs
  • 8 Red dates
  • 8 Dried longan
  • 15g Solomon's seal (Yu Zhu)
  • 10g Dang Shen (Codonopsis roots)
  • 10g Goji berries
  • 4 pieces Chinese yam (Huai Shan)
  • The broth
  • 700ml Water

Method

  1. Rinse all the herbs briefly under cold water and set aside.
  2. Add the chopped chicken, all the herbs, and 700ml water into the rice cooker pot.
  3. Close the lid and cook on Soup mode for 3 hours. Walk away and let the rice cooker do everything.
  4. Pour yourself a warm bowl and finish with a scoop of Bovine Collagen stirred through. ✨
Rinse the herbs but do not soak them. A quick rinse removes any dust from the dried herbs. You do not need to soak them beforehand for this recipe as the 3-hour cook time is long enough to draw out all the flavour and goodness naturally.
All the herbs are available at any TCM shop or wet market. If you are not sure where to start, just bring this ingredient list and ask. Most shops sell pre-packed herbal soup sets too which makes it even easier.

Tip 01

Use a whole chicken for maximum flavour. A whole chopped chicken gives you a mixture of darker and lighter meat plus the carcass, all of which release collagen and flavour into the broth over the 3-hour cook. If you prefer, chicken drumsticks or a whole leg work well too.

Tip 02

The 3 hours is important. Unlike the shorter rice cooker recipes, this one genuinely needs the full cooking time for the herbs to release their properties into the broth. The longer it cooks, the deeper the flavour and the more nourishing the soup becomes.

No seasoning needed during cooking. The herbs, dates, and longan add their own natural sweetness and depth. Taste the soup once it is done and add a small amount of salt only if you feel it needs it. Most people find it does not.
